New new โ Hiramasa with roasted husk cherries. The piรจce de rรฉsistance is the peak season hush cherries and chilies from @norwichmeadowsfarm. We slowly roast the cherries and then mix with fermented habanero, smoked fish sauce and lime. Perfect acidity and balance thatโs tasting great with virtually all the wines ๐ค

New additions to the bottle list โ Andreas and Elisabeth Tscheppe are making beautiful living wines in Styria, Austria. We were lucky to visit these terraced vineyards in Spring 2023 with @gribrie and @oldoriginalnick and they were bursting with life
Most of these white grapes are skin-fermented and all the wines are aged 18 months in barrels for them to be fully integrated with oxygen. 2022 was a challenging vintage for Andreas but the yield that prevailed is stunning and weโre excited to share these bottles with a lucky few ๐ฆ

Our team had so much fun visiting our friends at @forthave_spirits HQ this afternoon. It was such a treat to see their process and taste through their staples/newer experiments. Thanks for the hospitality!

Two summer treats for you - tempura wax beans and branzino ๐โโ๏ธ
We take a mix of fresh summer beans and blanch then lightly fry them in tempura batter, served up with a black garlic aรฏoli. The branzino is pan seared and coming with corn, chanterelle and lemongrass.
